Eucalyptus Meringue and Raspberries
Ingredients
- 2 ½ cups fresh raspberries
- 1 ¼ cups caster sugar
- 3 egg whites
- 1 tablespoon water
- 2 drops Eucalyptus oil
Directions
Combine sugar and water in a saucepan over medium heat. Stir to dissolve the sugar and then simmer until the sugar syrup reaches 233 degrees Fahrenheit on a sugar thermometer. This should take about 6-8 minutes. While heating, begin whisking the egg whites in an electric mixer until soft peaks form. Do not over whip. Continue cooking the sugar syrup until it reaches 250 degrees Fahrenheit on the thermometer. Remove from heat and begin to add to the egg whites, whisking continuously. Continue whisking until the mixture is cooked, about 10 minutes. Fold the Eucalyptus oil in and then spoon the mixture into a piping bag with a 1centimeter or similar size nozzle.
Place the raspberries in heatproof bowls and pipe the meringue on top. With a blowtorch or by placing under a hot grill, brown the tops and serve warm.
